Catch Up

To say I’m playing catchup is a complete understatment. So much has happened since THANKSGIVING. I turned 23, got my very own paying job, one best friend got married (one is getting married this weekend, and one in July), spent sometime with family, bought a plane ticket for a Nashville vacation, and enjoyed some fun weekends with friends. I was really meaning to be intentional about this blog and have it be something I could enjoy! And I will start doing just that. Stay tuned for lots of crafty projects for a July wedding!

Thankful Thankful!

I know Thanksgiving was yesterday, but I have spent the last two days with family and cooking with my mom! So this post will just have to be late! But with so much to be thankful for, it seems wrong to not write about it!

First of all I’m thankful for my parents! I seriously have the best parents. I know that they are just perfect for me! I’m thankful that I get to sit next to my daddy every night at dinner, but even more so last night. My dad was diagnose with a brain tumor when I was a baby. By God’s grace and power he beat cancer and we are so blessed to have him! My mom is the glue that holds us all together. She sacrifices so much to take care of our family. If I turn out to be half the wife and mom she is, I’ll be so lucky! I’ve also been so blessed with the greatest big brother! He can always make me laugh. He may be so annoying but he’s just the right person for our family. He is also married to his high school sweatheart and she is such a great addition to the Smith clan!

    

 

 

 

 

 

 

 

As I’ve mentioned before, I have the greatest friends ever. I am so blessed to have met my best friends when I was in elementary school. I am so thankful that they’ve stuck by me and everytime we see eachother it’s like nothing has changed! I went to college and also met some awesome friends. We jsut get each other. The worst part about graduating was moving away from the friends that I basically spent every day with. I am so blessed to have so many great people in my life that I get to call friends and so very thankful for them.

 

Most of all, I’m thankful for grace. I’m thankful to serve a God who sacrificed His Son for me and who is rich in mercy. I am undeserving but so grateful!

As promise, a post about the pumpkin party! One of the things I miss most about college life was having friends over all the time. We’re always so busy now. Luckily my parents love having people over so they agreed to let me throw a pumpkin party. Big shout out to Samantha for helping! I spent Friday glittering pumpkins and I can’t think of a more fun way to spend a day!

I am so lucky that I had a great group of friends in high school. I’m even more lucky that we are still friends. It was so fun to get together with them, I’m so glad to be back in Austin!  We at Halloween themed treats and had a blast carving pumpkins and then instagraming them! Such a blast! The Best is Yet to Be

Wow, it’s been a while. So many things have happen. I got to meet the most precious baby ever. She needed to not have visitors for a while so she could gain some weight, but she has a great mommy who takes great care of her! I’ve been doing a wonderful bible study with some great new friends! And….the best news…..I’m going to hosting a super fun, theme-treats filled (yup that happened), fun with friends pumpkin carving party!! That will definitely be posted about Saturday! But for now here’s what I did this weekend!

Let me tell you about my friend Megan. I first met her in 6th grade on the first day of school. I did not pronounce her name correctly and she wasted no time correcting me. The first time I ever went to her house her mom drove up to a historic mansion in Round Rock (which isn’t theirs) and then to a shack (which also isn’t where they live). I almost didn’t get out at their actual house! Megan is a fantastic friend and a beautiful woman! I spent a lot of time with her and her family growing up, and I am so blessed by them.  On Saturday she married her best friend! I don’t get to see her enough, since she lives in Abilene, but I wouldn’t miss the chance to go to a beautiful wedding. Better yet, a beautiful wedding of a wonderful friend! The wedding was so personal, which I feel like lots of weddings are lacking, but not overly sappy and long.In other words, it was perfect!

I spent the weekend with my parent’s best friends who live in Abilene! We spend lots of time together and our families are basically family. It’s that kind of relationship. Carla and I both share a love of crafts! She happened to be getting rid of craft stuff this weekened, and I was glad to give it a home! I got some fun lace, and two things that will become a jewelry organizer and a scarf rack! I also got the best thing ever…..all her glitter!!!!! It fills a whole canister….I’m one happy girl!

The perfect dress!

Two of my precious best friends from childhood are getting married next year in March and July. Today I got to go with one of them to find the perfect dress! Let me tell you, it was quite the experience! We’ve been friends since we were 10, so we really get each other. She had a pretty clear idea of what she wanted which was nice! I kept thinking how surreal it was that she was trying on wedding dresses! I’m so blessed with my lifelong friendships, but at 10 years old you never imagine that 12 years down the road you’ll be shopping together for the most important dress you’ll ever wear!!

It was such a special time and I’m so glad to say she found the PERFECT dress! She will be the most beautiful bride and I can’t wait for her lucky guy to see her, she will take his breathe away! Being a bridesmaid is so so fun, I can’t wait for the crazy year to come!

Thankfulness

Since moving back, I’ve gotten to experience the church I grew up in as an adult.  It has been pretty cool. I know pretty much everyone and they know me. So I still feel  at home, but now I’m not in a youth group so there are more ways to be involved. Last night I got to participate in a ladies bible class taught by two amazing women of God. We’re talking about thankfulness! The class was inspired by the book One Thousand Gifts by Ann Voskamp.  As part of the class they challenged us to start our own list of 1000 things we’re thankful for. This will shift our thinking into being grateful for the “little things”. I’m so excited to start this journey, and see where the Lord will lead me in thankfulness! Join me if you’d like!

Mini Ricotta Cakes

My mom and her best friend (Carla) each have 1 daughter.  Carla and I are freakishly similar and her daughter and my mom are freakishly similar. So much so that sometimes we say we could have been switched at birth (except that I’m adopted and  she is 3 years older than I am).  I am deeply grateful for the mom I have!  One thing that all 4 of us share is the love of new recipes.  Carla found this one in a magazine. On a family visit, we decided to try it out! Let me tell you everyone there raved about it. These cookies (although the name says mini cake, formalities) have the most awesome texture! And they are just the right amount of sweet and unsweet. I have tried a couple different glaze’s on top. I’ll add the one that the recipe comes with and the one I tried today!

Here’s what you need: 

2 1/4 C all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 C unsalted butter, softened

1 C granulated sugar

1 Egg

1 C ricotta

1 tsp vanilla extract

Here’s what you do:

Preheat oven to 350

Coat 2 baking sheets with nonstick cooking spray (I used parchment paper)

Whisk flour, baking powder, baking soda, and salt together, set aside

Cream together butter and sugar

Add egg, ricotta and vanilla, beating until combined

On low, add flour mixture and beat until blended

Drop by tablespoons onto prepared pans

Bake for 14 minutes or until lightly browned around edges

Let cool on sheets 3 minutes, then remove to rack to cool completely

Here’s the Glaze that came with the recipe:

2 C confectioners’ sugar

3 Tbs milk

Beat confectioners’ sugar and milk together until well blended. Dip tops of cookies into glaze and set aside until glaze has hardened.

***This glaze was good, but I often don’t appreciate the texture of the powdered sugar and milk. To each his own!

I made cream cheese frosting from my mom’s Better Homes and Garden cookbook, with Raspberry extract.

Here’s the recipe:

Ingredients

  • 1 8-ounce package cream cheese, softened
  • 1/2 cup butter, softened
  • 2 teaspoons vanilla (I used Raspberry extract)
  • 5 3/4-6 1/4 cups sifted powdered sugar

Directions:

Beat cream cheese, butter, and vanilla with electric mixer until light and fluffy. Gradually add 2 cups of the powdered sugar, beating well. Gradually beat in additional powdered sugar to reach spreading consistency.

***I made half the recipe.

Let me tell you  that this combination was SO yummy! All the cookies were gone before I got around to finishing this post so there is not picture of the finished product. Not a bad problem to have, in my book!

Kylie Grace Baby Shower!

If you are blessed to have a group of friends that really get you {and love you anyway}, know what you’re thinking before you think it, can always pick up where you left off, make you laugh til you cry, and have stood by you in your best moments and your worst, then you can understand what these girls mean to me.

We’ve been friends since we were 10 (some of us longer then that). I could not live life without them. Which brings me to this baby shower!

My friend Sarah {the gorgeous blonde}  is expecting a little girl in October. I cannot wait to meet Kylie Grace {cute name huh?!}!!!!!

When I found out she was pregnant, I could not wait to throw a baby shower. So I was just over the moon excited when we found out the baby is a girl! Any chance to add a ridiculous amount of pink to my life is always welcome!  Enough with my blabbering and on to pictures!

We made the pink cupcake stand with a tutorial found at one of my favorite blogs!

We made the glitter crowns with a tutorial from another blog I love!

I also made these for her as a gift! They were so easy to make and look so precious and girly! Those are my favorite crafts, people are so impressed but they don’t know how simple it really was! Here is the tutorial.

Brand New blog!!!

I recently graduated from college (Texas Tech University) and have moved back home to Austin! I was incredibly blessed with a wonderful college experience. I made amazing friends and grew so much. My gracious parents have opened their home to me once again and I’m loving seeing them everyday! I’m currently interning with The Arc of the Capital Area in their Development and Marketing Department. I’m learning so much about their annual Gala and having a great time!

Which brings me to this blog. Those of you who have known me for a while, know I love a nice party! I’ve always planned amazing birthday parties (with the help of my great mom) for myself. When I was in highschool, I decided (again with the help of my great mom, seriously what would I do without her?!) to go into the hospitality field. I love everything about it! One day I would like to work for myself planning weddings and everything else that needs planning! This blog will be a little of that, a little crafty projects, a little cooking, and a little of what my life after college looks like!
